Ingredients

  • 1 kg pork belly
  • 4 packs salt
  • Herbs Provence

Instructions

  1. Cut 2×2 cm squares approximately 1 cm deep into the rind of the pork belly.
  2. Spread 4 packs of salt (approximately 2 cm high) in a baking dish slightly larger than the pork belly.
  3. Place the pork belly on top of the salt bed and sprinkle with Herbs Provence.
  4. Cook in the oven at 200°C (392°F) for 2 hours, until the pork belly reaches an internal temperature of 63°C (145°F).
  5. Remove the pork belly from the salt bed and cut it open to serve.
