  • 3 tablespoon Worcestershire sauce

  • 2 tablespoon honey
  • 0.5 teaspoon ½ oregano, grated
  • 2 kg spare ribs, sliced as thinly as possible
  • 0.5 teaspoon ½ chili powder

Instructions

  1. Boil the spare ribs with a quartered onion for approximately 1 hour, until the ribs reach an internal temperature of 63 °C (145 °F).
  2. While the ribs cook, peel and dice the remaining onion and garlic. Heat 1 tablespoon of oil over medium heat, add the onion and garlic, and cook for 3-4 minutes until translucent. Add the tomato ketchup, lemon juice, Worcestershire sauce, vinegar, mustard, honey, and oregano. Stir constantly over medium heat for 2-3 minutes until the honey dissolves completely.
  3. Separate the cooked ribs into individual pieces or small clusters. Mix the remaining 2 tablespoons of oil with the chili powder, and brush the ribs evenly with this mixture.
  4. Heat a grill or oven broiler to high heat (approximately 200 °C / 400 °F). Place the ribs on the grill or broiler rack. Cook for 20-25 minutes total. During the last 10 minutes, brush the sauce thickly over the ribs several times, turning them occasionally, until they are crispy and browned on all sides.
  5. Transfer any remaining sauce to a serving bowl. Serve the grilled ribs with the sauce on the side.
