Ingredients

  • 750 g ribs, smoked
  • 5 sausages (Mettwürstchen or Pfefferbeißer)
  • 2 slices bacon, smoked, as thick as a finger
  • 2 large chilli pepper (s), dried
  • 3 teaspoons salt, lightly heaped
  • 2 tablespoon oil, neutral in taste (e.g. sunflower oil)
  • 3 tomato (s), ripe, removed from the stalk and roughly diced
  • 2 large onions, roughly diced
  • 2 clove (s) garlic, pressed through
  • 1 pinch (s) cayenne pepper
  • 500 g lentils, black (belua lentils)
  • 1 kg potato (s), waxy, diced (.5 cm)
  • 1 batata (s), diced (.5 cm)
  • 1 kg pumpkin (se), (Hokkaido), cleaned, diced (.5 cm)

Instructions

  1. Preliminary information: The total cooking time for the stew is approx. 70 minutes.
  2. Rinse the smoked thick rib with cold water and bring to the boil in 3 liters of cold water with salt and chili peppers. Put the lid on at a slight angle and simmer the ribs for 40 minutes.
  3. Meanwhile, cut the bacon into 4 cm wide strips. Heat the oil in a pan and fry the bacon on both sides until crispy. Then take it out of the pan and immediately add to the thick rib in the saucepan.
  4. Fry the onions in the hot frying fat, stirring occasionally, for 3 minutes until translucent. Add the garlic and stir everything well. Roughly dice the tomatoes and also add to the pan. Fry for another 3 minutes, stirring occasionally and season with a little salt and a good pinch of cayenne pepper. Immediately add the contents of the pan to the thick rib in the saucepan.
  5. Wash the lentils thoroughly in a colander under cold running water. After the 40 minutes add the lentils to the meat, bring to the boil, then reduce the heat again, because the soup should only simmer slightly. Stir occasionally.
  6. After 22 minutes, add the potatoes and sausages to the pot. After another 3 minutes, put the pumpkin and potato cubes in the saucepan.
  7. Five minutes later, remove the meat from the pot, remove it from the bone, roughly dice and return it to the pot. When the lentils, potatoes and sweet potatoes are soft, season the stew to taste and serve.
  8. Tip: the stew can also be frozen well or prepared as a party pot.
