Ingredients

  • 150 g black puddin
  • salt and pepper
  • Piment d`Espelette
  • 4 tablespoon heavy cream
  • 2 tablespoon flour
  • 1 egg (s)
  • 4 tablespoon breadcrumbs or panko
  • 1 apple
  • 1 tablespoon butter
  • 1 tablespoon sugar, brown
  • 2 slices white bread
  • Oil for deep-frying

Instructions

  1. Mix the black pudding with salt, pepper, chili powder and cream and put in a cool place so that the mixture becomes firm again. Then form small dumplings with a teaspoon and wet hands. Bread with flour, egg and breadcrumbs and fry in oil.
  2. Cut out the casing from the apple and cut the apple into slices. Melt the butter in a pan and fry the slices over low heat. Sprinkle with the sugar and caramelize a little.
  3. Toast the bread slices and cut them into shape.
  4. For a starter for 4 people, put an apple slice on a plate, place some black pudding pralines on top and serve with the white bread.
  5. For an amuse gueule, quarter the bread, quarter the apple slice, place one piece on top of a piece of bread, place a praline on top and secure it with a wooden skewer so that it doesn`t roll off.
