Ingredients

  • 300 g bacon cubes
  • possibly black pepper

For the dough:

  • 500 g wheat flour
  • 250 g flour (semi-white flour)
  • 40 g fresh yeast, crumbled
  • 4 ½ dl milk, lukewarm
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 80 g butter, soft

For painting:

  • 1 egg yolk
  • 1 tablespoon milk

Instructions

  1. Fry the bacon in a pan without fat, season with pepper if necessary
  2. For the dough, knead all ingredients except the butter in a food processor for 1 minute until everything is nicely mixed, then add the softened butter and knead for another 6 minutes until a plastic dough is formed. At the end add the bacon and knead well again.
  3. Shape the dough into a ball and let rise for an hour. To do this, cover the bowl with a wet kitchen towel (hot) so that no skin develops. Divide the dough into 2 even strands and braid into a braid.
  4. Mix the milk and egg yolks together. Place the braid on a baking sheet lined with baking paper and brush with the egg-milk mixture. Let rise again for 30-40 minutes. In the meantime, preheat the oven to 200 ° C (top / bottom heat).
  5. Brush the plait again with egg and bake in the lower half of the oven for about 40 minutes. If you tap the underside of the braid and it sounds hollow, it`s baked enough. Place on a rack and let cool down.
