Ingredients

  • 2 pairs sausages, grilled
  • 0.5 ½ cup cream or crème fraiche
  • 1 red pepper (s)
  • 0.5 stick ½ leek
  • 0.5 ½ bunch oregano or 2 teaspoons dried
  • 1 teaspoon mustard
  • 1 tablespoon tomato paste
  • ginger
  • chili
  • salt and pepper
  • some butter
  • possibly broth

Instructions

  1. Cut the grilled sausages into small slices. Heat butter in a pan over medium heat, add the slices, and fry for 2-3 minutes.
  2. Add the diced red pepper and sauté over medium heat for 2 minutes. Remove the sausages and red pepper from the pan and set aside.
  3. Add the sliced leek to the pan and sauté over medium heat for 5 minutes.
  4. While the leek cooks, mix the cream, mustard, and tomato paste. Add broth a bit at a time if you want to thin the sauce to your preferred consistency.
  5. Pour the sauce over the leek. Return the sausages and red pepper to the pan. Season with salt, pepper, ginger, and chili to taste.
  6. Simmer for 10 minutes.
  7. Just before serving, stir in the chopped oregano.
  8. Serve with fresh baguette or mashed potatoes.
