Brizol with Mushroom and Pickled Cucumber Filling

An excellent hearty dish, which is not difficult to prepare, is a brizol stuffed with mushrooms and pickles. Delicate egg pancake with juicy minced meat batter and an appetizing filling of fried mushrooms, pickles, and cheese. Such a dish will help make the morning of the weekend or even a weekday much more pleasant, because it does not take long to cook.

Ingredients

  • Minced meat - 300 g
  • Eggs - 4 pcs.
  • Milk - 4 tbsp
  • Salt to taste
  • Ground black pepper - to taste
  • Butter - 10 g
  • Champignons - 250 g
  • Hard cheese - 150 g
  • Pickled cucumber - 2 pcs.
  • Sour cream - 2 tbsp
  • Granular mustard - 2 teaspoon
  • Garlic - 2 cloves
  • Salt to taste
  • Ground black pepper - to taste
  • Vegetable oil - 2 tbsp

Directions

  1. Prepare all the ingredients you need.

  2. Prepare the filling. Cut the champignons into slices and fry in a mixture of vegetable and butter until golden brown. Remove the pan with fried mushrooms from heat and set aside.
  3. Grate the cheese on a coarse grater. Cut the pickled cucumbers into strips. Pass the peeled garlic through a press or grate on the finest grater.
  4. Combine fried mushrooms, half grated cheese, pickled cucumbers, garlic, sour cream, and granular mustard in a deep bowl. Season with a little salt and pepper. Stir.
  5. Place one part of the minced meat on a plastic bag, cover with the same bag, and roll it with a rolling pin into a thin pancake that matches the dia of the bottom of your pan.
  6. Beat one egg into a deep bowl, add a little salt, add 1 tablespoon of milk, and whisk.
  7. Melt the butter in a skillet and pour the omelet mixture into it.
  8. Gently place the minced meat pancake on top of the egg pancake. Fry for 2-3 minutes.
  9. Remove the pancake onto a plate with the minced meat facing up. Place 1/4 of the mushroom filling on half of the pancake. Sprinkle cheese on top. Cover the filling with the loose pancake half.
  10. Prepare the three remaining brizols in the same way. Or (optional) the preparation of brizol can be simplified: do not roll out the minced pancakes, but simply combine the remaining minced meat with the remaining eggs, mix well, fry in a pan, forming pancakes from the mass, and then put the mushroom filling inside the finished pancakes. The result is a lazier brizol, but just as tasty.
  11. Microwave the lazy brizols before serving to melt the cheese a little (if you decide to go the lazy way, you don't have to). Rinse green onions, dry, and chop finely. Sprinkle the prepared brisols with chopped onions, garnish with parsley leaves and serve.
