Ingredients

  • 750 g broccoli
  • 0.5 liter ½ vegetable stock
  • 400 g onion (s)
  • 3 cloves garlic
  • 4 tablespoon oil (olive oil)
  • 2 cups yogurt (low-fat yogurt)
  • 3 tablespoon curry
  • 3 tablespoon turmeric
  • 1 tablespoon cayenne pepper
  • 75 g almond (s), peeled
  • Pepper from the grinder
  • Salt (sea salt)

Instructions

  1. Wash the broccoli thoroughly, remove the stems and divide into small florets. Cook in 1/4 L vegetable stock until al dente, then strain. Peel the onions and garlic cloves and cut into small cubes. Heat the olive oil in a pan, fry the onions and garlic until golden brown. Place in a saucepan with broccoli florets, the remaining vegetable stock and low-fat yoghurt.
  2. Season to taste with curry powder, turmeric, sea salt and the peppers and cover and simmer on a low flame for 10 minutes. Finally add the almonds.
  3. Tip: Instead of broccoli, you can also use cauliflower without changing the number of calories.
