- 1 kg potato (s)
- 3 egg (s)

- First the matjes salad is made:
- Cut the herring into small cubes and also the onion
- Cut small cubes, put everything in a bowl and serve with
- Mix the oil and vinegar and put in the fridge for about half an hour.
- Now wash, peel and roughly grate the potatoes. Place in a large, fine sieve and squeeze gently so that the potato liquid comes out.
- Peel the onion and finely grate it under the potatoes. Add eggs, salt and a little nutmeg and mix everything together. If the dough is still too runny, add enough flour so that the dough is not too firm.
- Heat vegetable fat or oil in the pan. Bake golden brown, crispy potato pancakes from small amounts of dough in hot fat.
- Now cover the still warm potato pancakes with the matjes salad
- and serve immediately.
