Ingredients

  • 20 scoops mozzarella (mini)
  • 20 cherry tomato (s)
  • 40 chives
  • 3 tablespoon olive oil
  • 1 tablespoon herbs, mixed (chopped)
  • Pepper from the grinder
  • 1 teaspoon lime juice or balsamic vinegar

Instructions

  1. Remove the mozzarella balls from the brine and drain them completely. If using any larger balls, cut them to the same size as the mini balls.
  2. In a bowl, combine the chives with the olive oil and freshly ground pepper. Add the drained mozzarella balls and let them marinate for at least 3 hours, or overnight.
  3. Wash the cherry tomatoes and halve them.
  4. Remove the marinated mozzarella balls from the bowl, reserving the liquid. Thread each ball onto a toothpick, positioning a tomato half and a small portion of the mixed herbs alongside it.
  5. Season the reserved marinade with lime juice or balsamic vinegar to taste, then drizzle it over the assembled skewers.
