Ingredients

  • 375 g carrot (s), peeled
  • 200 ml water
  • 125 ml lime juice
  • 1 lime (s), zest it
  • 500 g preservin suar (2: 1)

Instructions

  1. Roughly grate the peeled carrots and put them in a saucepan with the water. Cover and simmer for approx. 10 minutes at not too high a heat. The water should have evaporated. Add the lime juice, lime zest and preserving sugar to the carrots. Bring to the boil while stirring and cook for 5 minutes. Then pour hot into clean jars and close immediately.
