Ingredients

  • 1 cauliflower
  • 1 cup crème fraîche with herbs
  • 1 bunch chives, cut into rolls
  • 1 teaspoon vinegar, (white wine vinegar)
  • 1 teaspoon sugar
  • salt
  • possibly herbal salt
  • Pepper, freshly ground black

Instructions

  1. Clean the cauliflower, cook al dente, let cool and cut into florets lukewarm.
  2. Make a marinade from the other ingredients (except for the chives) and let the cauliflower steep in it for about 2 hours.
  3. Sprinkle with the chives rolls before serving.
