Ingredients
- 1 cauliflower
- 1 cup crème fraîche with herbs
- 1 bunch chives, cut into rolls
- 1 teaspoon vinegar, (white wine vinegar)
- 1 teaspoon sugar
- salt
- possibly herbal salt
- Pepper, freshly ground black

- Clean the cauliflower, cook al dente, let cool and cut into florets lukewarm.
- Make a marinade from the other ingredients (except for the chives) and let the cauliflower steep in it for about 2 hours.
- Sprinkle with the chives rolls before serving.
