Ingredients

  • 600 g celeriac
  • 3 egg (s)
  • 220 g low-fat quark
  • 90 g sour cream
  • 90 ml olive oil
  • 10 g locust bean um
  • Herbs, at will
  • salt and pepper
  • Clarified butter, for frying

Instructions

  1. Peel the celery and cut into thin strips (e.g. a slicer with a julienne function). Mix with the remaining ingredients and knead well. Season with plenty of salt and pepper. Bake in portions in plenty of clarified butter and drain on a kitchen towel. The mass makes approx. 20 buffers.
  2. Herbal quark or tzaziki go well with this.
