Ingredients

  • 800 g chanterelles
  • 100 g bacon
  • 2 onions)
  • 250 g crème fraîche
  • 3 tablespoon chives in rolls
  • Balsamic vinegar
  • salt and pepper

Instructions

  1. Cut the bacon and onions into fine cubes.
  2. Add the bacon to a pan over medium-high heat and cook for 5-7 minutes until crispy.
  3. Add the onions to the pan and cook over medium heat for 3-4 minutes until softened.
  4. Add the chanterelles and season with salt and pepper, cook over medium-high heat for 4-5 minutes until well seared.
  5. Add the crème fraîche and bring to a boil over medium heat, cooking for 1-2 minutes.
  6. Remove from heat, stir in the chives and a dash of balsamic vinegar, adjust salt to taste if needed, and serve.
