Charlotte with Apricots (in a Slow Cooker)

Ingredients

  • Fresh apricots – 500 g
  • Eggs – 3 pcs.
  • Sugar – 0.75 cups (to taste)
  • Flour – 150 g
  • Salt – 1 pinch
  • Vanillin (optional) – 1 pinch
  • Soda – 0.5 teaspoon
  • Vinegar – 0.5-1 teaspoon
  • Butter – 10 g

Instructions

  1. Wash the apricots, peel, and cut into slices.
  2. Crack 3 eggs into a bowl, add 0.75 cups sugar, and beat for 2-3 minutes until pale and smooth.
  3. Sift the flour with a pinch of salt, then add to the egg mixture and stir gently.
  4. Add a pinch of vanillin (optional) and mix.
  5. In a small bowl, mix 0.5 teaspoon soda with 0.5-1 teaspoon vinegar to activate it.
  6. Add the activated soda mixture to the batter and stir gently from bottom to top.
  7. Add the apricot slices and mix gently until evenly distributed.
  8. Grease the slow cooker bowl with 10 g butter and pour the batter in.
  9. Cook on Bake or Soup mode for 40 minutes.
  10. Turn the charlotte out onto a serving platter and dust with powdered sugar if desired.
