Charlotte is the most famous cake in the world and uncomplicated, it is baked in all countries. Usually, charlotte is baked with apples, and today we will bake it with pineapples. Pineapples add a nice tropical flavor to your baked goods.

Ingredients

  • Canned pineapples – 200 g
  • Wheat flour – 160 g
  • Baking powder – 0.5 teaspoon.
  • Sugar – 180 g
  • Powdered sugar – 1 tbsp
  • Eggs – 4 pcs.
  • Vegetable oil – 1 teaspoon. (for mold lubrication)

Instructions

  1. Preheat oven to 180°C (356°F).
  2. Oil a baking mold with vegetable oil and line it with baking paper.
  3. Beat 4 eggs with 180 g sugar on high speed for 3-5 minutes until pale and roughly doubled in volume.
  4. Sift 160 g flour and 0.5 teaspoon baking powder together, then fold into the egg mixture until just combined.
  5. Drain 200 g canned pineapples from syrup and cut into small cubes.
  6. Fold pineapples into the batter.
  7. Pour batter into the prepared mold.
  8. Bake for 35-45 minutes until a wooden toothpick inserted in the center comes out clean.
  9. Cool on a wire rack, then dust with 1 tbsp powdered sugar before serving.
