Ingredients

  • 1 kg spaetzle
  • 150 g cheese, (Old Amsterdam)
  • 180 g cheddar cheese
  • 1 bunch spring onion (s)
  • 1 ½ cup milk
  • some butter
  • Pepper, freshly ground

Instructions

  1. Cut the spring onions and some of the greens into fine slices. Rasp cheese. Set aside the spring onions and cheese.
  2. Sweat the onions in butter, add the spaetzle and heat.
  3. Now put 1-2 handfuls of cheese and some milk on the spaetzle, mix and put the lid on until the cheese has melted. Mix again and again. Reduce the heat! Now repeat until the cheese and milk are used up. Finally add the spring onion greens and pepper and mix together.
  4. If you want, you can use something for garnish! Serve immediately!
  5. Variants: cooked and smoked ham and / or various herbs.
