Ingredients

For the dough: (pizza dough)

  • 300 g wheat flour type 550
  • 200 g durum wheat semolina
  • 12 g sea salt
  • 7 g dry yeast or 21 fresh yeast
  • 1 pinch (s) sugar
  • 290 g water, lukewarm
  • 3 tablespoon olive oil

For covering:

  • 2 onions)
  • 5 pickled cucumber (s)
  • 2 scoops mozzarella, 15 g each
  • 5 slices processed cheese
  • 750 g round beef
  • salt and pepper
  • 1 pinch paprika powder, smoked e.g., Pimenton de la Vera
  • 5 tablespoon pizza sauce
  • 6 tablespoon tomato ketchup
  • 1 teaspoon, heaped mustard, medium hot

Instructions

  1. Mix wheat flour, durum wheat semolina, and sea salt in a large bowl and form a well in the center.
  2. Mix yeast with sugar in a separate container. Gradually add lukewarm water until yeast dissolves completely. Pour into the well and let rise for 15 min.
  3. Add olive oil and knead the mixture with a hand mixer on medium speed for 5 min until a smooth dough forms. Cover bowl and let dough rise for at least 2 hours.
  4. While dough rises, roughly dice the onions, cut pickles into thin slices, and cut mozzarella balls and processed cheese slices into small cubes.
  5. Place ground beef in a hot pan over high heat. Season with salt, pepper, and smoked paprika powder and cook for 5 min without adding fat, stirring occasionally. Add diced onions and cook for 2 min more. Remove pan from heat and let cool.
  6. Knead dough again, roll out on a large baking sheet, and stretch slightly at the edges. Dust the baking sheet with durum wheat semolina to prevent sticking.
  7. Let rolled dough rise in a warm oven at 30°C (86°F) with top/bottom heat for 15 min.
  8. Spread pizza sauce evenly on dough. Mix tomato ketchup and mustard with the cooled beef mixture and spread on dough. Top with pickles, then mozzarella and processed cheese cubes.
  9. Preheat oven to 200°C (392°F) with top/bottom heat and bake for 20 min until golden.
