Cherry Cheesecake no Baked

Ingredients

  • Biscuit biscuits 250 gram
  • Butter 130 gram
  • Sugar 150 Gram
  • Water 125 Milliliters
  • Gelatin 15 Gram
  • Eggs 6 Pieces
  • Lemon 1 Piece
  • Philadelphia cheese 500 Gram
  • Cream 400 Milliliters
  • Cherries To taste
  • in its juice

Instructions

  1. Grind the cookies with a blender.
  2. Mix crushed cookies with melted butter.
  3. The result is a homogeneous thick mass.
  4. We put the cookies in a mold and tamp them, evenly distributing them over the surface. We put it to freeze in the refrigerator.
  5. Dissolve sugar in 80 ml of water over low heat.
  6. Bring to a boil, boil for another minute and remove from heat.
  7. Meanwhile, beat the egg yolks.
  8. Pour in the syrup, whisking constantly. Until the mass cools down.
  9. In the process of whipping, the mass will become like a cream and brighten.
  10. Dissolve the gelatin in the remaining water.
  11. Toss Philadelphia cheese with lemon/lime zest.
  12. Add gelatin and beat until smooth.
  13. Combine the cheese mass with the yolk.
  14. In a separate container, beat the cream until soft peaks.
  15. Add the cream to the previously prepared mass and mix gently with a silicone spatula until smooth.
  16. Pour the mixture into the cheesecake mold directly onto the crust.
  17. Cover the top with cling film and refrigerate for at least 5-6 hours, and best of all overnight.
  18. Decorate the finished cheesecake as you like. I garnished with canned cherries in my juice and made the side with whipped cream.
