Ingredients

  • 4 chicken breast fillet (s)
  • 2 tablespoon butter
  • 2 tablespoon flour
  • 0.25 liter ¼ chicken broth
  • 0.25 liter ¼ cream
  • 1 handful herbs (parsley, basil, chervil, thyme), chopped
  • salt and pepper
  • sugar
  • Lemon juice
  • 150 g cheese, (Gouda)
  • Butter, for greasing the form

Instructions

  1. Butter a baking dish. Preheat the oven to 200°C (392°F). Wash the chicken breast fillets, pat dry, and season both sides with salt and pepper.
  2. Melt 2 tablespoons butter in a saucepan over medium heat. Stir in 2 tablespoons flour and cook for 2 minutes until golden brown. Add 250 ml chicken broth and stir well. Bring to a boil. Gradually add 250 ml cream while stirring. Return to a boil, then remove from heat. Stir in a handful of chopped herbs (parsley, basil, chervil, thyme) and season with salt, pepper, a pinch of sugar, and lemon juice to taste.
  3. Pour half the sauce into the bottom of the prepared baking dish. Arrange the 4 chicken breast fillets in a single layer in the dish. Pour the remaining sauce over the chicken. Grate 150 g of Gouda cheese and sprinkle evenly over the top.
  4. Bake for 30 minutes until the chicken is cooked through (internal temperature at the thickest part reaches 74°C / 165°F).
