  • Chicken Breasts – 4 Pieces
  • Peanuts – 0.75 Cup (chopped)
  • White bread – 3 Slices (crackers can be used)
  • Eggs – 2 Pieces
  • Salt – 1 To taste
  • Pepper – 1 To taste

Chicken Breasts in Peanuts Instructions

  1. Season the 4 chicken breasts on both sides with salt and pepper to taste.
  2. Make breadcrumbs from the 3 slices of white bread, or use crackers as an alternative.
  3. In one shallow bowl, beat the 2 eggs until combined. In another shallow bowl, mix the breadcrumbs with the 0.75 cup of chopped peanuts.
  4. Dip each seasoned chicken breast into the beaten egg to coat both sides, then dip into the breadcrumb-peanut mixture, pressing gently so the coating adheres.
  5. Lightly oil a baking dish.
  6. Gently roll each breaded chicken breast into a roll shape and place seam-side down in the prepared baking dish.
  7. Bake at 230°C (446°F) for 20 minutes until the chicken reaches an internal temperature of 74°C (165°F).
