  • Chicken liver – 300 g
  • Bread – 200 g
  • Pickled cucumbers (gherkins) – 5 pcs.
  • Vegetable oil – 2 tbsp
  • Butter – 50 g
  • Fresh dill – 0.5 bunch
  • Salt to taste

  1. Rinse chicken liver under cold water and remove any veins
  2. Heat vegetable oil in a pan over medium-high heat until shimmering, about 2 minutes
  3. Add chicken liver to the hot oil, season lightly with salt, and fry for 20 minutes until cooked through (internal temperature 74 °C / 165 °F)
  4. While the liver fries, finely dice the pickled cucumbers into small cubes; set aside 1 whole cucumber for garnish
  5. Finely chop the fresh dill
  6. Transfer the cooked chicken liver to a blender with 50 g butter
  7. Blend until smooth and pâté-like in consistency
  8. Transfer the pâté to a bowl, add the diced cucumbers and chopped dill, and mix well
  9. Spread the pâté mixture evenly onto bread slices
  10. Arrange the prepared bread slices on a baking sheet
  11. Place in a 200 °C (392 °F) oven for 5 minutes to warm through
  12. Remove from oven and garnish each sandwich with a cucumber slice and fresh dill
  13. Serve warm
