Ingredients

  • Chicken thighs - 1.2 kg
  • Sour cream - 150 g
  • Ketchup - 100 g
  • Seasoning for chicken - 1 tablespoon
  • Salt to taste

  • Sugar - 0.5 teaspoon
  • Ground black pepper - to taste

Directions

  1. Wash chicken thighs and pat dry with paper towels. Remove the skin. Using a sharp knife, carefully separate the bone from the pulp, not reaching the joint on the other side. Turn the bone in the opposite direction. Clean the bone. Thus, treat all the thighs.

  2. Prepare the chicken marinade. Mix sour cream, ketchup, chicken spices and salt (if the spices are without salt).
  3. Mix everything. Taste and adjust the marinade to your liking. If the spices are not spicy enough, you can add more pepper and dried garlic.
  4. Place the chicken thighs in the marinade so that they are completely covered. Leave the chicken in the marinade for 2 hours or longer (in this case, refrigerate and remove an hour before cooking) .

  5. Prepare pickled onions. Cut a large onion into thin half-rings.
  6. Put the chopped onion in a bowl, add sugar, salt and a little black pepper. Drizzle with lemon juice and leave for 15 minutes.
  7. Before cooking, wrap the bones in foil: this way they will not burn.
  8. Place chicken thighs on a wire rack and set on a charcoal grill over the coals. Turning the wire rack on one side or the other, fry the meat until tender. After 15-20 minutes, the pirzola will be ready.
  9. For serving on a plate put pita bread, chicken thighs, pickled onions. Add chopped vegetables and herbs. Serve immediately.
