Ingredients

  • 4 m. Chicken breasts
  • 1 medium lemon (s), juice and zest
  • 2 tablespoon olive oil
  • 2 cloves garlic
  • 0.25 teaspoon ¼ thyme, dried

Instructions

  1. Mince the 2 garlic cloves. Zest and juice the medium lemon.
  2. In a small bowl, combine the minced garlic, lemon zest, lemon juice, 2 tablespoons olive oil, 1/4 teaspoon dried thyme, salt, and pepper.
  3. Coat the 4 chicken breasts on all sides with the mixture.
  4. Heat a grill pan or grill to medium-high heat. Grill the chicken for 4-5 minutes on each side until the internal temperature reaches 74°C (165°F).
  5. Serve the chicken with hummus, olive oil, olives, and baguette, along with a green salad.
