Ingredients
- 4 bunches chives, thick
- 7 egg (s), hard-boiled
- 100 ml cream
- salt and pepper
- vinegar
- oil

- Peel the eggs and separate the yolks from the whites. Cut the egg white into small cubes.
- Mix the egg yolks with the cream. Add oil, vinegar, pepper and salt and mix until there are no more pieces of egg yolk. I like to use the wand for that. Then add the egg white.
- Cut the chives with the scissors in a sieve as small as possible and then wash in the sieve and drain well.
- Finally mix the chives with the egg sauce and let it steep for at least 30 minutes. Possibly add seasoning.
- Fried potatoes taste good with it.
