Chocolate Cheesecake without Baking

- You can use any cookie or bake a biscuit.
- If you don’t have chocolate curd cheese, you can use regular cheese. You can use milk chocolate.
- Place the detachable form (18-20 cm) on the dish and cover the sides of the form with acetate foil.
- Prepare products for the base.
- Melt the butter.
- Grind the cookies into small crumbs with a blender.
- Combine cookies, melted butter, and cream (or milk) in a bowl.
- Mix everything thoroughly.
- Spread evenly over shape and compact.
- Put in the refrigerator while we cook the filling.
- Prepare the ingredients for the filling.
- Soak gelatin in water and leave until it swells.
- In a bowl, combine cream cheese (regular and chocolate), powdered sugar, vanilla sugar, and a pinch of salt.
- Beat with a mixer until smooth.
- Melt the chocolate in a water bath or a microwave oven, in impulses for 10 seconds, stirring well each time.
- Add to the cheese mass and mix well.
- Heat gelatin (do not boil!), Strain through a fine sieve, and add to the cheese and chocolate mass. Mix.
- Whisk the cream until a steady peak. Only well-chilled cream is whipped.
- The bowl and whisk can also be refrigerated for 15-20 minutes before whipping.
- Gradually add whipped cream to the cheese and chocolate mass and mix gently with a spatula.
- Transfer the mass to a mold, cover with foil and refrigerate for 3-4 hours or better overnight.
- Remove the ring before serving, remove the film.
- Decorate the top of the cheesecake with grated chocolate.
