Ingredients

  • 1 tablespoon oil
  • 1 large onion (s)
  • 0.25 liter ¼ water
  • 2 tablespoon curry powder
  • 3 clove (s) garlic
  • 500 g chicken, lamb or beef
  • 150 ml coconut milk
  • some coriander green, chopped
  • salt and pepper

Instructions

  1. Cut the meat into bite-sized pieces and slice the onion.
  2. Heat the oil in a pan over medium heat. Cook the onion and minced garlic for 3-4 minutes until softened.
  3. Add the meat and cook for 4-5 minutes until browned on all sides.
  4. Stir in the curry powder and cook for 1 minute.
  5. Pour in the coconut milk and 250 ml water. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 15-20 minutes until the meat is tender. If using chicken, cook until the internal temperature reaches 74 °C / 165 °F.
  6. Season with salt and pepper to taste and garnish with the chopped coriander.
