Ingredients

  • 400 g flour, (wheat flour)
  • 100 g flour, (whole wheat flour)
  • 100 ml milk
  • 250 ml coffee, (espresso)
  • 2 packs dry yeast
  • 70 g round coffee or espresso
  • 1 tablespoon salt
  • 6 tablespoon sugar
  • 1 teaspoon coriander, ground
  • 1 teaspoon cardamom, ground
  • 1 tablespoon, leveled cinnamon, ground
  • 1 packet vanilla sugar
  • 1 teaspoon anise or star anise, ground
  • 2 tablespoon honey

Instructions

  1. Put the flour with the yeast and the remaining ingredients in a wide bowl.
  2. Heat the milk and espresso together to approx. 35 degrees or let them cool down. Add the liquid to the flour mixture and slowly stir in with a wooden spoon. Let the dough rise in the bowl for about 1 ½ hours in a warm place (ideally at 40 degrees with a fan oven).
  3. Now knead the dough on a work surface dusted with flour and knead in a little flour again and again until the dough can be easily removed from your hand. Shape the dough into a loaf and place on a baking sheet with parchment paper.
  4. Bake at 200 degrees (top and bottom heat) on the middle rack for 40 - 50 minutes.
