  • 1 kg deer meat (saddle deer), loosened
  • 1 tablespoon, heaped pepper, more colorful
  • 1 tablespoon game spice
  • some clarified butter
  • 1 stalk rosemary
  • some mustard, grainier

Instructions

  1. Let the saddle of deer come to room temperature.
  2. Heat a little clarified butter and fry the saddle of venison on all sides for about 2 minutes on each side. Set the oven to 80 degrees circulating air.
  3. Rub the meat with the previously ground pepper and the game spices and place on a baking sheet lined with baking paper. Add the rosemary sprigs. Let the meat cook in the oven for about 3 to 3.5 hours.
  4. Just before the end of the cooking time, spread a thin layer of mustard. If you want, you can increase the temperature to 200 degrees until the mustard is colored.
  5. Rösti corners and lamb`s lettuce with black nuts go well with it.
