Cranberry Curd Muffins

I have always admired airy baked goods with cottage cheese. And so I myself have learned to bake delicate and weightless muffins from cottage cheese! And I am pleased to share this recipe with you.

Cook: 30 mins

Servings: 10-12

Ingredients

  • Wheat flour – 1.5 Glasses
  • Sugar – 1 Glass
  • Chicken eggs – 8 Pieces
  • Salt – 1.5 Pinches
  • Vanilla Sugar – 1 Teaspoon
  • Curd – 300 Grams

Directions

  1. Beat the egg whites in a mixer bowl. After a minute, add cottage cheese, sugar, salt to the eggs. Continue whisking until a thick cream is obtained.
  2. Rinse the cranberries dry, chop them with a knife.
  3. Add sifted flour, sugar, vanillin and cranberries to the mixture. Mix the mixture thoroughly.
  4. Fill the molds with the cranberry-curd mixture.
  5. Bake muffins in a preheated oven to 240 degrees for 20 minutes.
