Ingredients

  • 1 onion (s)
  • 1 lime (s)
  • 0.5 ½ bunch mint
  • 1 clove garlic
  • 2 tablespoons oil
  • 800 ml vegetable stock
  • 600 g peas (frozen)
  • 4 tablespoon crème fraîche
  • salt and pepper
  • tarragon
  • 150 g natural yourt

Instructions

  1. Cut the onion into cubes, halve the lime and squeeze out the juice. Finely chop the mint and garlic.
  2. Heat the oil in a saucepan and sauté the onion cubes and garlic until translucent. Deglaze with the broth. Add the peas and simmer for about 10 minutes. Puree the soup, stir in the creme fraîche and season with salt, pepper and tarragon.
  3. Mix the yogurt with the mint and season with lime juice. Arrange the soup on plates, garnish with a dollop of mint yoghurt and a mint leaf.
