Ingredients

  • 8 medium potato (s)
  • 1 packet creamed spinach, defrosted
  • 1 onion (s), finely diced
  • some nutmeg, freshly grated
  • Salt and pepper, fresh from the mill
  • 4 medium egg (s)
  • 1 dash milk
  • 3 tablespoon vegetable oil, neutral

Instructions

  1. Peel the potatoes and cook them in salted water.
  2. In the meantime, peel and dice the onion. Heat some oil in a saucepan, add half of the onions and sauté. Now add the spinach and season with freshly grated nutmeg, salt and pepper.
  3. Mix the eggs in a bowl with the milk and the remaining onions and season with a little freshly ground pepper and salt. Heat some oil in a non-stick pan and add the mixture. Now let the mass build up and turn every now and then.
  4. Serve the potatoes with spinach and egg.
  5. A dish for the whole family.
