- 1 onion (s), finely diced
- some nutmeg, freshly grated
- Salt and pepper, fresh from the mill
- 4 medium egg (s)
- 1 dash milk
- 3 tablespoon vegetable oil, neutral

- Peel the potatoes and cook them in salted water.
- In the meantime, peel and dice the onion. Heat some oil in a saucepan, add half of the onions and sauté. Now add the spinach and season with freshly grated nutmeg, salt and pepper.
- Mix the eggs in a bowl with the milk and the remaining onions and season with a little freshly ground pepper and salt. Heat some oil in a non-stick pan and add the mixture. Now let the mass build up and turn every now and then.
- Serve the potatoes with spinach and egg.
