Ingredients

  • 9 egg yolks
  • 200 g honey (lavender honey)
  • 0.5 liter ½ whipped cream

Instructions

  1. Creamy egg yolks with honey on the stove - whip until frothy and then beat cold.
  2. Then fold in the whipped cream, pour the mixture into a tin lined with cling film (I`ll use a small loaf tin) and let it freeze.
  3. Possibly a berry sauce with it.
  4. Let thaw for at least 1/2 to 3/4 hours before serving.
  5. I have also taken other honey before and it may not have to be lavender honey, but it should taste a bit tart otherwise I think the ice cream will be too sweet.
