Ingredients

  • 2 tablespoon olive oil
  • 2 small onions
  • 2 cloves garlic)
  • 300 g potato (s), boiled
  • 3 boxes cress
  • 0.5 liter ½ vegetable stock
  • 100 g crème fraîche liht with herbs
  • 2 pinches salt
  • 1 pinch (s) black pepper, ground
  • 1 pinch nutmeg, ground
  • 1 teaspoon paprika powder, hot (e.g. rose paprika)
  • 1 teaspoon marjoram, dried
  • 0.5 teaspoon ½ thyme, dried

Instructions

  1. Peel and roughly chop the onions and garlic cloves and place in the Thermomix. Chop 5 sec / speed 5. Add olive oil. Braise for 3 min./Varoma / Level 1.
  2. In the meantime, peel the potatoes and wash the cress. Put a small portion of the cress aside, which will later be used as a decoration on the soup. Dry off the rest of the cress a little, add to the Thermomix and sauté again for 1 minute / flavor / level 1. Cut the potatoes into large pieces and add them. Now chop the whole thing for approx. 6 seconds / level 6.
  3. Add vegetable stock, salt, pepper, nutmeg, paprika powder, marjoram and thyme. Let simmer for 11 min / 100 ° C / speed 3. Now puree the soup for approx. 12 seconds / speed 10 (attention: hot steam often escapes at the top!). Pour the crème fraîche into the Thermomix and mix again for 6 sec / speed 5. Possibly season again with the above-mentioned spices (one or the other might like it a little more spicy). Transfer to soup plates and serve decorated with the rest of the cress.
