Croissant with Avocado and Salmon Ingredients

  • 2 croissants
  • 1 large ripe avocado
  • 4-6 thin slices of smoked or lightly salted salmon
  • 1 tsp lime juice
  • 1 tbsp mayonnaise “Provencal”
  • 0.5 tsp lime zest
  • 0.5 tsp fish sauce
  • freshly ground black pepper
  • lettuce leaves, optional

Peel the avocado and remove the pit. Mash the flesh with a fork, adding lime juice and zest, fish sauce, and mayonnaise – you should have a small chunky paste.

Pepper the fish. Cut croissants in half lengthwise, brush with avocado paste, add fish. Add green leaves if desired. Serve immediately.
