Croutons with Cheese, Boiled Eggs and Green Onions Spread

Crispy white bread croutons with a delicate spread of boiled eggs, cheese, mayonnaise, and herbs are a great option for a budget, easy-to-prepare breakfast, or a quick snack. Try it!

Servings: 2

Ingredients

  • White bread or baguette – 200-250 g
  • Hard cheese – 60 g
  • Eggs – 2 pcs.
  • Fresh dill – 10 g
  • Mayonnaise – 50 g
  • Garlic – 1 clove
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for frying) – 20-30 g

    For the filling (optional):

  • Lettuce leaves – 2-3 pcs.

Directions

  1. Boil the eggs hard-boiled: place them in a saucepan, cover with cold water, put on the heat, and bring to a boil. Reduce heat to medium and simmer for about 8 minutes. Then place the boiled eggs in cold water for a few minutes. Peel the cooled eggs from the shell.
  2. Cut the bread into portions of the desired size and about 1 cm thick. Chop the dill finely. Grate cheese and boiled eggs on a coarse grater.
  3. Combine the minced eggs, cheese, herbs, and mayonnaise in a deep bowl. Save a few pinches of chopped herbs if desired to garnish ready-made croutons.
  4. Taste the resulting spread and add some salt and ground black pepper if necessary.
  5. Heat a skillet over medium heat and brush with vegetable oil. Toast the bread slices for about 2-3 minutes on each side, until golden brown.
  6. Grate the resulting croutons with a peeled garlic clove if desired.
  7. Spread the prepared spread over the croutons.
  8. Place the boiled egg and cheese croutons on a plate. Garnish with lettuce, if desired. Sprinkle each crouton with a small pinch of herbs and serve.
