  • 2 piece (s) duck breast
  • salt and pepper
  • 250 ml poultry broth
  • 125 ml port wine
  • 10 g clarified butter

Instructions

  1. Season the duck breasts with salt and pepper from the mill and fry in a pan in a little fat. First on the skin side and then on the inside. Cook at 200 degrees in the oven for about 30 minutes. Deglaze the roast with port wine and fill up with the poultry stock. Let the sauce boil down to the desired consistency. Slice the duck breast and serve with the sauce.
