Ingredients

  • 600 g duck breast
  • 1 cup soy sauce
  • 3 cloves garlic
  • 1 teaspoon lemongrass, cut or powder
  • 3 tablespoon honey
  • 2 tablespoon vinegar, (fruit vinegar)
  • 3 tablespoon oil, (soybean oil)
  • 0.5 liter ½ vegetable stock
  • 5 ml rice wine
  • 100 g mushrooms, shiitake
  • 1 leek
  • 1 cup peanuts, salted
  • 1 tablespoon five-spice powder
  • salt
  • pepper

Instructions

  1. Cut the duck breast into bite-sized pieces.
  2. Mix the soy sauce with grated garlic cloves, lemongrass, honey, fruit vinegar, salt and pepper and marinate the duck in it for at least an hour.
  3. Heat soybean oil in a wok and fry the duck pieces in it.
  4. Pour the stock with rice wine and cook for about 30 minutes.
  5. Cut the mushrooms into strips, slice the leek and add to the meat with the peanuts.
  6. Season to taste with five-spice powder as well as pepper and salt.
  7. Rice or wok noodles go well with it.
