Halve the zucchini lengthways and then cut into as thin slices as possible. Depending on the size, either cut the mushrooms into thin slices or halve them beforehand and then cut them into thin slices.
Put everything in a salad bowl. Add the crushed garlic cloves. Add the lemon zest and lemon juice and mix well with the oils, salt and pepper.
Let it steep for at least 10 minutes.
