Ingredients

  • 400 g ladyfiners
  • 5 egg yolks
  • 250 g butter (Roombotter)
  • 200 g powdered suar (bastard suar)
  • 150 ml egg liqueur
  • 100 ml rum
  • 100 ml coffee, stronger

For decoration:

  • 200 ml cream
  • 2 packs vanilla sugar
  • 1 pack cream stabilizer

Instructions

  1. Mix butter, powdered sugar, egg yolk and egg liqueur until foamy (approx. 20 minutes so that the cream becomes nice and loose).
  2. Mix the rum and coffee.
  3. Place the first layer of sponge fingers in a springform pan, drizzle with the rum and coffee mixture, pour the cream on top, drizzle with the sponge fingers again and finish with the cream.
  4. Whip the cream with the vanilla sugar and whipped cream until stiff and garnish the cake with whipped cream.
