- 2 egg yolks
- 2 teaspoons mustard

- Sear the aubergines over an open flame while grilling until they turn black. Then peel off the skin. Peel and finely chop the onions, then mix with the aubergines.
- Make a mayonnaise from the egg, mustard and oil - mix the egg yolks with the mustard and then beat in enough oil to make a mayonnaise.
- Mix all ingredients together and finally season with salt.
