Ingredients

  • 3 kg elderberries, washed and cleaned
  • 10 grains coriander
  • 1 stick cinnamon, roughly broken, 2 star anise
  • 2 pinches vanilla powder
  • 1 packet citric acid
  • 2 kg sugar
  • 0.5 ½ lemon (s) / zest it

Instructions

  1. Put the elderberries in a saucepan and mix with the spices. Cover just under with water and cook for 30 minutes. Pour the juice through a juice cloth into another saucepan, ideally let it drain overnight.
  2. Measure the resulting juice, mix to 1 l of juice with 500 g of sugar (the sugar in the list of ingredients is only an approximate indication), boil for another 5 minutes and fill hot into clean, hot-rinsed bottles and close.
