- 3 kg elderberries, washed and cleaned
- 10 grains coriander
- 1 stick cinnamon, roughly broken, 2 star anise
- 2 pinches vanilla powder
- 1 packet citric acid
- 2 kg sugar
- 0.5 ½ lemon (s) / zest it

- Put the elderberries in a saucepan and mix with the spices. Cover just under with water and cook for 30 minutes. Pour the juice through a juice cloth into another saucepan, ideally let it drain overnight.
- Measure the resulting juice, mix to 1 l of juice with 500 g of sugar (the sugar in the list of ingredients is only an approximate indication), boil for another 5 minutes and fill hot into clean, hot-rinsed bottles and close.
