Ingredients

  • 700 ml vegetable stock
  • 2 tablespoon flour
  • 100 ml milk
  • 1 egg (s)
  • possibly cream or coffee cream
  • salt and pepper
  • nutmeg
  • some chives, finely chopped
  • some parsley, finely chopped
  • possibly cheese, grated (Emmentaler or Gruyere)

Instructions

  1. Bring the bouillon to the boil. Mix the flour with the milk and stir into the boiling bouillon. Season and cook for 20 minutes.
  2. Now beat the egg well in the soup bowl and refine it with 2 tablespoons of cream if necessary. Remove the hot soup from the stove and pour into the soup bowl, stirring constantly. Add the chives and parsley.
  3. Serve freshly grated Emmentaler or Gruyère with the soup, if you like.
