Ingredients
- 2 mango (s), ripe
- 2 lime (s)
- 1 carrot (s)
- 1 red pepper (s)
- 100 g rocket
- 1 chilli pepper (s), red
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 3 tablespoon oil, (peanut oil)
- 50 g peanuts, roasted and salted
- 1 bunch coriander, fresh and chopped
- 1 pinch (s) salt

- Finely grate the peel of a lime, squeeze both fruits. Core, finely chop the chilli pepper, mix with the lime juice and zest, soy sauce and sugar until the sugar dissolves. Stir in peanut oil, season with salt.
- Peel and core the mangoes and cut the flesh into strips. Clean and core the peppers and cut into thin strips. Peel the carrot, grate coarsely. Clean, wash and spin dry the rocket. Mix all salad ingredients with chopped coriander in a large bowl, pour the dressing over it and fold in. Sprinkle with peanuts and serve.
- Goes well with grilled food, fish, meat or vegetable nuggets.
