Ingredients

  • 1 glass artichoke hearts, quartered
  • 1 red pepper (s), diced
  • 1 onion (s), diced
  • 1 clove (s) garlic, chopped
  • 0.5 ½ bunch coriander greens
  • 0.5 can ½ corn kernels

For the dressing:

  • 6 tablespoon white wine vinegar, vegan
  • 3 tablespoon olive oil
  • 1 teaspoon agave syrup
  • some salt and pepper

Instructions

  1. Chop the coriander into small pieces. Mix all ingredients, season with salt and pepper and let steep in the refrigerator for at least 1 hour.
  2. A great accompaniment to tortillas or gratinated oven dishes.
