Instructions

1. Put the egg yolks, lemon juice and creme fraîche in a tall bowl and stir until smooth with a whisk. Slowly melt the butter in a saucepan over a mild heat.
2. Now gradually add the butter to the egg yolk mixture, stirring constantly. Season the finished sauce with salt and pepper.
