Ingredients

  • 1 large egg (s)
  • 1 tablespoon palm sugar, or brown sugar
  • 4 tablespoon corn flour, cornstarch
  • 2 tablespoon tapioca flour
  • 0.5 teaspoon ½ baking powder
  • 0.25 teaspoon ¼ salt
  • 2 tablespoon desiccated coconut, freshly dried as an alternative
  • 50 ml coconut milk, unsweetened, only the thick layer
  • 4 banana (s), preferably green
  • 0.5 liter ½ oil, for frying

Instructions

  1. Mix the egg with the sugar in a bowl. Add flour, baking powder, salt and desiccated coconut and work with the coconut milk to form a smooth dough. Let the dough rest for 10 minutes.
  2. Peel the bananas and cut in half crosswise. Heat the oil in a pan, wok or deep fryer. The oil is hot enough when small bubbles rise from a wooden spoon that is held in the oil. Roll the bananas in the batter and then fry them in the hot oil over a medium heat for about 4 minutes.
  3. Degrease the bananas on paper towels and pour honey over them and serve while they are still hot.
