Ingredients

  • 250 g spahetti, whole rain
  • 500 g cucumber (s)
  • 1 kg melon (s), (watermelon)
  • 1 onion (s), red
  • 6 stalks mint
  • 6 tablespoon lime juice
  • 3 tablespoon olive oil
  • 200 g feta cheese, crumbled
  • salt and pepper

Instructions

  1. Cook the wholemeal spaghetti in plenty of boiling salted water according to the instructions on the packet, drain and rinse with cold water.
  2. Peel the cucumber and watermelon, core if necessary and cut into small cubes. Peel and finely chop the red onion. Pluck the mint leaves from the stems and roughly chop them.
  3. Cut the pasta into small pieces with scissors and mix with the cucumber, melons, onion, lime juice and olive oil in a bowl. Season with salt and pepper and let steep for 10 minutes. Mix in half of the mint. Sprinkle the lettuce with the crumbled feta and the remaining mint and chill until serving.
