Ingredients

  • 300 g mushrooms, fresh mixed. Porcini mushrooms, mushrooms, possibly chanterelles
  • 1 lemon (s)
  • 1 bunch parsley, smooth
  • 1 egg yolk
  • 1 clove garlic
  • 100 ml extra virgin olive oil
  • sea-salt
  • Pepper from the grinder

Instructions

  1. Clean fresh mushrooms; cut into thin slices, drizzle with a little lemon {fry the chanterelles briefly)
  2. Whisk 1 egg yolk with salt, pepper and the rest of the lemon, then squeeze in 1 clove of garlic. Gradually pour in 100ml olive oil while stirring constantly. Chop the parsley very finely and mix in. Season the sauce to taste, drizzle over the mushrooms.
